Apricot Cardamom Chia Pudding

A creamy chia pudding with coconut milk and freshly ground cardamom. Lightly sweet, rich, and aromatic, with fresh apricots and pistachios.
Ingredients
- —¼ cup chia seeds
- —½ cup water
- —1 (13–16 oz) can coconut milk
- —¼ cup agave, plus more to taste
- —½ teaspoon cardamom (freshly ground if possible)
- —1½ cups apricots, chopped
- —½ cup pistachios, loosely chopped
Directions
- 1.In a bowl, combine the chia seeds and water. Let sit for about 20 minutes to soften.
- 2.Add the coconut milk, agave, and cardamom.
- 3.Stir well and let sit for a few minutes, then stir again to prevent clumping.
- 4.Taste and adjust sweetness if needed before chilling.
- 5.Cover and refrigerate for at least 1–2 hours, or overnight, until thickened.
- 6.Stir before serving, then lightly fold in the apricots and pistachios.
Notes
For the best flavor, grind whole cardamom seeds using a mortar and pestle. Ground cardamom also works.
You can use your preferred sweetener, adjusting the amount to taste.
Ripe fruit makes a real difference here. Let apricots soften on the counter until they're sweet and fragrant. The same goes for blackberries — fully ripe ones are noticeably better.
Blackberries with pistachios are another favorite — other fruits and nuts work well too.
