Arugula Salad with Walnuts & Balsamic Glaze

A simple arugula salad with toasted walnuts, olive oil, and balsamic glaze. Light, peppery, and satisfying on its own or with added protein.
Ingredients
- —2–3 handfuls arugula
- —¼ cup toasted walnuts
- —1–2 tablespoons olive oil
- —1–2 teaspoons balsamic glaze
- —Salt, to taste
- —Optional: cooked chicken or other protein
Directions
- 1.Place the arugula in a bowl and drizzle with olive oil.
- 2.Add a pinch of salt and toss gently.
- 3.Top with the toasted walnuts and drizzle with balsamic glaze.
- 4.Add cooked chicken or other protein if you like.
Notes
If your walnuts aren't already toasted, warm them in a dry pan for a few minutes until fragrant.
Use a generous amount of olive oil so the greens are well coated.
Best with fresh, mild arugula.
