Arugula Salad with Walnuts & Balsamic Glaze

A simple arugula salad with toasted walnuts, olive oil, and balsamic glaze. Light, peppery, and satisfying on its own or with added protein.

Ingredients

  • 2–3 handfuls arugula
  • ¼ cup toasted walnuts
  • 1–2 tablespoons olive oil
  • 1–2 teaspoons balsamic glaze
  • Salt, to taste
  • Optional: cooked chicken or other protein

Directions

  1. 1.Place the arugula in a bowl and drizzle with olive oil.
  2. 2.Add a pinch of salt and toss gently.
  3. 3.Top with the toasted walnuts and drizzle with balsamic glaze.
  4. 4.Add cooked chicken or other protein if you like.

Notes

If your walnuts aren't already toasted, warm them in a dry pan for a few minutes until fragrant.

Use a generous amount of olive oil so the greens are well coated.

Best with fresh, mild arugula.
