Creamy Grated Cabbage Slaw

Finely grated cabbage and carrot with mayonnaise and honey mustard. A simple slaw with a soft, creamy texture — a little sweet, a little heat.
Ingredients
- —2 cups cabbage, grated
- —1 small carrot, finely grated
- —1 tablespoon mayonnaise (such as Vegenaise)
- —1 teaspoon honey mustard
- —Pinch sea salt
- —Freshly ground black pepper
- —Optional: thinly sliced red bell pepper
- —Optional: sunflower seeds
Directions
- 1.Grate the cabbage using the larger holes of a box grater.
- 2.Grate the carrot using the finer holes.
- 3.Place the cabbage and carrot in a bowl.
- 4.Add the mayonnaise, honey mustard, salt, and pepper.
- 5.Toss until everything is lightly coated.
Notes
The finely grated vegetables give this slaw a softer texture than traditional coleslaw.
Taste before serving and adjust — a little more mayo, mustard, salt, or pepper goes a long way.
