Creamy Grated Cabbage Slaw

Finely grated cabbage and carrot with mayonnaise and honey mustard. A simple slaw with a soft, creamy texture — a little sweet, a little heat.

Ingredients

  • 2 cups cabbage, grated
  • 1 small carrot, finely grated
  • 1 tablespoon mayonnaise (such as Vegenaise)
  • 1 teaspoon honey mustard
  • Pinch sea salt
  • Freshly ground black pepper
  • Optional: thinly sliced red bell pepper
  • Optional: sunflower seeds

Directions

  1. 1.Grate the cabbage using the larger holes of a box grater.
  2. 2.Grate the carrot using the finer holes.
  3. 3.Place the cabbage and carrot in a bowl.
  4. 4.Add the mayonnaise, honey mustard, salt, and pepper.
  5. 5.Toss until everything is lightly coated.

Notes

The finely grated vegetables give this slaw a softer texture than traditional coleslaw.

Taste before serving and adjust — a little more mayo, mustard, salt, or pepper goes a long way.
