Cucumber and Fennel Salad

A simple, crisp salad. Cool, bright, and lightly aromatic.

Ingredients

  • ½ cucumber
  • ¼–½ fennel bulb, sliced very thin
  • A small pinch fennel fronds, chopped
  • Juice of ½ lime
  • A good pinch of sea salt

Directions

  1. 1.Cut the cucumber into quarters lengthwise, then slice thinly.
  2. 2.Slice the fennel very thin and roughly chop.
  3. 3.Place everything in a bowl with the fennel fronds.
  4. 4.Add the lime juice and salt.
  5. 5.Toss gently to combine. Let sit for a few minutes before serving.

Notes

Slice everything thin so the textures come together.

The fennel fronds add a soft, herbal note.

Adjust salt and lime to taste — the balance is what brings it together.
