Cumin Roasted Cauliflower

Cauliflower florets roasted with olive oil, cumin, and smoked paprika until tender and lightly browned. A squeeze of lemon at the end brightens everything up.

Ingredients

  • 1 medium head cauliflower
  • 2 tablespoons olive oil
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper
  • 1 teaspoon cumin seeds (or ¾ teaspoon ground cumin)
  • ½ teaspoon smoked paprika
  • Optional: squeeze of fresh lemon

Directions

  1. 1.Preheat the oven to 400°F.
  2. 2.Rinse the cauliflower and cut it into small florets.
  3. 3.Place the florets on a baking sheet and toss with olive oil, salt, pepper, cumin, and smoked paprika.
  4. 4.Spread the cauliflower out so it roasts rather than steams.
  5. 5.Roast for 20–25 minutes, stirring once or twice, until tender and lightly browned.
  6. 6.Finish with a squeeze of lemon if you like.

Notes

Smaller florets roast faster and get more browned edges.

If using cumin seeds, they add a little extra texture and flavor.
