Easy Curry Beef & Cabbage

This easy one-pan dish bakes ground beef under a layer of cabbage with warm curry spices. The beef cooks in a little water, creating a light broth that the cabbage absorbs as it softens. It's simple, cozy, and surprisingly flavorful.
Ingredients
- —1 lb ground beef
- —1½ cups water
- —1 heaping teaspoon curry powder
- —2–3 cups chopped green cabbage
- —1 tablespoon olive oil
- —½ teaspoon sea salt
- —¼ teaspoon freshly ground black pepper
- —½ teaspoon curry powder (for the cabbage)
Directions
- 1.Preheat the oven to 400°F.
- 2.In an oven-safe skillet or pan, add the ground beef and water.
- 3.Break up the beef with a spoon or fork and mix it into the water.
- 4.Season the beef mixture with curry powder, salt, and pepper.
- 5.Spread the chopped cabbage evenly over the top of the beef.
- 6.Drizzle the cabbage lightly with olive oil and season with a little more curry powder, salt, and pepper.
- 7.Bake for about 20 minutes, until the cabbage is tender and lightly browned on top.
- 8.Remove from the oven and stir everything together so the cabbage absorbs the flavorful broth.
Notes
Any oven-safe skillet or baking dish will work. Cast iron works especially well.
The dish will have a light curry broth after baking, which the cabbage absorbs when stirred.
Serving Suggestion
- Serve as is, or with rice if you want something to soak up the broth.
