Garlic Herb Pinto Beans

Soft, savory beans with garlic and herbs.

Ingredients

  • 1 cup dried pinto beans
  • Water
  • ½ teaspoon sea salt (plus more to taste)
  • 1½ tablespoons butter
  • 1 tablespoon olive oil
  • 4 cloves garlic, finely chopped
  • 1 tablespoon fresh thyme (or 1 teaspoon dried)
  • 1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried)
  • Freshly ground black pepper
  • Optional: lemon zest or a squeeze of lemon

Directions

  1. 1.Rinse the dried pinto beans, then place them in the Instant Pot and cover with several inches of water.
  2. 2.Cook on High Pressure for 30 minutes.
  3. 3.Drain and rinse the beans.
  4. 4.Return the beans to the Instant Pot, cover with fresh water just to cover, add the salt, and cook on High Pressure for another 30 minutes.
  5. 5.Drain most of the cooking water, leaving the beans moist but not soupy.
  6. 6.In a small pan, melt the butter with the olive oil over medium-low heat.
  7. 7.Add the garlic and cook briefly until fragrant, without browning.
  8. 8.Add the rosemary and thyme and stir for about 30 seconds, then remove from heat.
  9. 9.Pour the garlic-herb mixture over the beans and stir gently to combine.
  10. 10.Season with black pepper and add lemon zest or a squeeze of lemon if you like.

Notes

These beans are especially good served on buttered bread or alongside a nice piece of meat.
