Garlic Herb Pinto Beans

Soft, savory beans with garlic and herbs.
Ingredients
- —1 cup dried pinto beans
- —Water
- —½ teaspoon sea salt (plus more to taste)
- —1½ tablespoons butter
- —1 tablespoon olive oil
- —4 cloves garlic, finely chopped
- —1 tablespoon fresh thyme (or 1 teaspoon dried)
- —1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried)
- —Freshly ground black pepper
- —Optional: lemon zest or a squeeze of lemon
Directions
- 1.Rinse the dried pinto beans, then place them in the Instant Pot and cover with several inches of water.
- 2.Cook on High Pressure for 30 minutes.
- 3.Drain and rinse the beans.
- 4.Return the beans to the Instant Pot, cover with fresh water just to cover, add the salt, and cook on High Pressure for another 30 minutes.
- 5.Drain most of the cooking water, leaving the beans moist but not soupy.
- 6.In a small pan, melt the butter with the olive oil over medium-low heat.
- 7.Add the garlic and cook briefly until fragrant, without browning.
- 8.Add the rosemary and thyme and stir for about 30 seconds, then remove from heat.
- 9.Pour the garlic-herb mixture over the beans and stir gently to combine.
- 10.Season with black pepper and add lemon zest or a squeeze of lemon if you like.
Notes
These beans are especially good served on buttered bread or alongside a nice piece of meat.
