Ginger Tofu with Leeks & Shiitake

Tofu sautéed with leeks, shiitake mushrooms, fresh ginger, tamari, and black pepper. A simple one-pan dish with rich, savory flavor.
Ingredients
- —1 block firm tofu, drained
- —1 large leek, sliced
- —1 cup fresh shiitake mushrooms, roughly chopped
- —1 tablespoon olive oil
- —¾–1 inch fresh ginger, grated
- —1–2 tablespoons tamari
- —¼ teaspoon freshly ground black pepper
Directions
- 1.Heat olive oil in a skillet over medium heat.
- 2.Add the sliced leek and shiitake mushrooms and cook until fragrant and the mushrooms soften.
- 3.Cut the tofu into small cubes.
- 4.Add the tofu to the pan.
- 5.Grate the ginger over the tofu and add the tamari and black pepper.
- 6.Stir and cook for several minutes until everything is heated through and the tofu absorbs the flavor.
Notes
Draining the tofu first helps it absorb the tamari.
Serve on top of quinoa or a baked sweet potato.
