Instant Pot Garlic & Herb Beef Bone Broth

A simple, rich beef bone broth with garlic and herbs. Good for sipping or as a base for soups.
Ingredients
- —1 large beef soup bone (or 2 smaller bones)
- —1 whole garlic bulb, or ½ if very fresh
- —1 teaspoon sea salt
- —1 tablespoon vinegar
- —1 teaspoon dried rosemary
- —¾ teaspoon dried thyme
- —Water (just enough to cover the bones by about 1 inch)
Directions
- 1.Place the beef bone in the Instant Pot.
- 2.Add the garlic, salt, and vinegar.
- 3.Add water just to cover the bones by about 1 inch. If you have time, let sit for 10–20 minutes.
- 4.Seal the lid and cook on High Pressure for 3½–4 hours.
- 5.Allow the pressure to release naturally.
- 6.Once the lid can be opened, add the rosemary and thyme, crushing them slightly between your fingers as you add them.
- 7.Stir, cover loosely, and let the herbs steep for about 20 minutes.
- 8.Remove the bone and garlic, then taste and adjust the salt if needed.
Notes
Use less water for a richer, more concentrated broth, or a bit more if you prefer it lighter for sipping.
An onion skin (red or yellow) added to the pot deepens the color and adds a subtle richness.
The broth may gel as it cools, depending on the bones used and the amount of water.
A full head of garlic gives the broth a round, mellow flavor — especially if it's older. If using very fresh garlic, half a small head is plenty.
