Lemon Cardamom Tofu Mousse

A bright, creamy tofu mousse with fresh lemon and warm cardamom. Light, simple, and gently sweet.

Ingredients

  • 1 block firm tofu, drained well
  • 2–3 tablespoons honey or maple syrup
  • Juice of 1 lemon (about 2–3 tablespoons)
  • Zest of ½ lemon
  • 1 rounded teaspoon ground cardamom
  • 1 teaspoon vanilla extract
  • Optional: pumpkin seeds or sliced almonds
  • Optional: fresh strawberries, kiwi, or berries

Directions

  1. 1.Add all ingredients to a high-speed blender.
  2. 2.Blend until smooth and creamy.
  3. 3.Taste and adjust lemon or sweetness as needed.
  4. 4.Chill slightly or serve right away.

Notes

Drain the tofu well for a thicker, mousse-like texture. If it's not drained much, it will be softer, more like a pudding.

The lemon zest brings out the flavor—don't skip it.

Top with pumpkin seeds or sliced almonds, add fresh fruit if you like, and finish with a drizzle of honey.
