Lemon Cardamom Tofu Mousse

A bright, creamy tofu mousse with fresh lemon and warm cardamom. Light, simple, and gently sweet.
Ingredients
- —1 block firm tofu, drained well
- —2–3 tablespoons honey or maple syrup
- —Juice of 1 lemon (about 2–3 tablespoons)
- —Zest of ½ lemon
- —1 rounded teaspoon ground cardamom
- —1 teaspoon vanilla extract
- —Optional: pumpkin seeds or sliced almonds
- —Optional: fresh strawberries, kiwi, or berries
Directions
- 1.Add all ingredients to a high-speed blender.
- 2.Blend until smooth and creamy.
- 3.Taste and adjust lemon or sweetness as needed.
- 4.Chill slightly or serve right away.
Notes
Drain the tofu well for a thicker, mousse-like texture. If it's not drained much, it will be softer, more like a pudding.
The lemon zest brings out the flavor—don't skip it.
Top with pumpkin seeds or sliced almonds, add fresh fruit if you like, and finish with a drizzle of honey.
