Morning Miso (Bok Choy, Ginger, Scallion, Sesame)

A simple bowl to start the day. Light, warm, with a little brightness.

Ingredients

  • 2 cups water
  • 2 slightly rounded teaspoons miso (about 1 tablespoon)
  • 3–4 small bok choy leaves, sliced very thin
  • 1 tablespoon green onion, sliced
  • ½ teaspoon grated fresh ginger
  • Small drizzle toasted sesame oil
  • Small squeeze lime (or a few drops rice vinegar)

Directions

  1. 1.Bring the water to a boil in a small pan.
  2. 2.Turn off the heat and add the bok choy, green onion, and ginger. Let sit for about a minute, until just softened.
  3. 3.In a bowl, stir the miso with a little of the hot liquid until smooth.
  4. 4.Pour the vegetables and broth into the bowl and stir gently to combine.
  5. 5.Finish with a small drizzle of sesame oil and a squeeze of lime.

Notes

Slice everything very thin so it softens quickly.

Add the miso at the end so it doesn't cook.

Keep the lime subtle — just enough to lift the broth.

This works with other greens or thinly sliced vegetables, like zucchini, carrots, or sweet potato.
