Morning Miso (Bok Choy, Ginger, Scallion, Sesame)

A simple bowl to start the day. Light, warm, with a little brightness.
Ingredients
- —2 cups water
- —2 slightly rounded teaspoons miso (about 1 tablespoon)
- —3–4 small bok choy leaves, sliced very thin
- —1 tablespoon green onion, sliced
- —½ teaspoon grated fresh ginger
- —Small drizzle toasted sesame oil
- —Small squeeze lime (or a few drops rice vinegar)
Directions
- 1.Bring the water to a boil in a small pan.
- 2.Turn off the heat and add the bok choy, green onion, and ginger. Let sit for about a minute, until just softened.
- 3.In a bowl, stir the miso with a little of the hot liquid until smooth.
- 4.Pour the vegetables and broth into the bowl and stir gently to combine.
- 5.Finish with a small drizzle of sesame oil and a squeeze of lime.
Notes
Slice everything very thin so it softens quickly.
Add the miso at the end so it doesn't cook.
Keep the lime subtle — just enough to lift the broth.
This works with other greens or thinly sliced vegetables, like zucchini, carrots, or sweet potato.
