Oven Sweet Potato Fries

Thin sweet potato fries tossed with olive oil, salt, and pepper and roasted until soft with lightly browned edges. These are great with a quick garlic aioli or a little hot sauce.

Ingredients

  • 2 medium to large sweet potatoes
  • 2 tablespoons olive oil
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper
  • Optional: 1–2 cloves garlic, pressed or finely minced

Directions

  1. 1.Preheat the oven to 400°F.
  2. 2.Wash the sweet potatoes and trim off the ends. Leave the skins on if you like.
  3. 3.Cut each sweet potato in half, then slice into thin wedges and cut those into fries.
  4. 4.Place the fries on a baking sheet and toss with olive oil, salt, and pepper. If using garlic, add it to the pan.
  5. 5.Spread the fries out so they have space to roast.
  6. 6.Bake for about 20 minutes, until tender with lightly browned edges.

Notes

Cutting the fries thin helps them cook quickly and become tender.

You can cut thicker fries if you prefer—just cook them a little longer until they reach your desired tenderness and browning.

These fries make a great side with the burgers.

Optional Garlic Aioli (use Paleo mayonnaise if preferred)

  1. Mix ½ cup mayonnaise with 1 crushed or pressed clove garlic, a squeeze of lemon (about 1–2 teaspoons), a pinch of salt, black pepper, and a little smoked paprika. Serve alongside the fries.
