Quick Skillet Greens with Coriander

Tender greens quickly cooked in coconut oil with toasted coriander seeds. A simple, flavorful side dish.

Ingredients

  • 1 teaspoon coconut oil
  • 1 teaspoon coriander seeds
  • 1 small container baby cooking greens (such as baby chard or power greens)
  • Pinch sea salt
  • Freshly ground black pepper

Directions

  1. 1.Heat a skillet over medium-high heat.
  2. 2.Add the coconut oil.
  3. 3.Add the coriander seeds and cook briefly until fragrant.
  4. 4.Add a pinch of salt and a couple generous grinds of fresh black pepper.
  5. 5.Add the greens and toss until wilted and tender. Let them brown slightly if you like.

Notes

If you don't have coriander seeds, use ¼ teaspoon ground coriander instead — add it with the salt and pepper, just before the greens.
