Quick Skillet Greens with Coriander

Tender greens quickly cooked in coconut oil with toasted coriander seeds. A simple, flavorful side dish.
Ingredients
- —1 teaspoon coconut oil
- —1 teaspoon coriander seeds
- —1 small container baby cooking greens (such as baby chard or power greens)
- —Pinch sea salt
- —Freshly ground black pepper
Directions
- 1.Heat a skillet over medium-high heat.
- 2.Add the coconut oil.
- 3.Add the coriander seeds and cook briefly until fragrant.
- 4.Add a pinch of salt and a couple generous grinds of fresh black pepper.
- 5.Add the greens and toss until wilted and tender. Let them brown slightly if you like.
Notes
If you don't have coriander seeds, use ¼ teaspoon ground coriander instead — add it with the salt and pepper, just before the greens.
