Roasted Delicata Squash

Thin slices of delicata squash roasted with olive oil, smoked paprika, and garlic salt until tender and lightly browned.

Ingredients

  • 1 large delicata squash
  • 1½ tablespoons olive oil
  • ½ teaspoon garlic salt
  • ½ teaspoon smoked paprika

Directions

  1. 1.Preheat the oven to 400°F.
  2. 2.Trim the ends off the squash.
  3. 3.Cut it in half lengthwise and scrape out the seeds.
  4. 4.Slice the squash into thin half-moons.
  5. 5.Place the slices on a baking sheet.
  6. 6.Drizzle with olive oil and sprinkle with garlic salt and smoked paprika. Toss to coat.
  7. 7.Spread the squash out so the slices can roast rather than steam.
  8. 8.Roast for 15–20 minutes, stirring once if you like, until tender and lightly browned.

Notes

The skin of delicata squash is tender and can be eaten.
