Roasted Delicata Squash

Thin slices of delicata squash roasted with olive oil, smoked paprika, and garlic salt until tender and lightly browned.
Ingredients
- —1 large delicata squash
- —1½ tablespoons olive oil
- —½ teaspoon garlic salt
- —½ teaspoon smoked paprika
Directions
- 1.Preheat the oven to 400°F.
- 2.Trim the ends off the squash.
- 3.Cut it in half lengthwise and scrape out the seeds.
- 4.Slice the squash into thin half-moons.
- 5.Place the slices on a baking sheet.
- 6.Drizzle with olive oil and sprinkle with garlic salt and smoked paprika. Toss to coat.
- 7.Spread the squash out so the slices can roast rather than steam.
- 8.Roast for 15–20 minutes, stirring once if you like, until tender and lightly browned.
Notes
The skin of delicata squash is tender and can be eaten.
