Rustic Skillet Beets

Thinly sliced beets roast in olive oil with salt, pepper, and oregano until tender and lightly caramelized. If your beets come with greens, they cook right in the pan for an easy rustic side.
Ingredients
- —2–3 medium beets
- —2 tablespoons olive oil
- —½ teaspoon sea salt
- —¼ teaspoon freshly ground black pepper
- —½ teaspoon dried oregano (or 1 tablespoon fresh oregano)
- —Optional: beet greens
Directions
- 1.Preheat the oven to 400°F.
- 2.Rinse the beets. Trim off the tops and bottoms and remove any very thick skin near the stem.
- 3.Cut the beets into quarters, then slice them thinly.
- 4.Place the beets in an oven-safe skillet or baking dish.
- 5.Drizzle with olive oil and season with salt, pepper, and oregano. Toss lightly to coat.
- 6.Roast the beets for about 10–12 minutes.
- 7.If using beet greens, loosely chop them and remove any very thick stems. Scatter them over the beets.
- 8.Return the pan to the oven and roast another 10–15 minutes. About halfway through, stir everything together so the greens soften in the oil and beet juices.
- 9.Continue cooking until the beets are tender and lightly caramelized.
Notes
Slicing the beets thinly helps them cook faster and become tender.
A cast-iron skillet works especially well for caramelizing the edges.
A small drizzle of olive oil over the greens helps them soften as they cook.
