Simple Greens with Avocado & Hemp Seeds

Fresh greens with creamy avocado, hemp seeds, and a light vinaigrette. Red bell pepper adds a touch of sweetness and color, making this a simple, everyday salad you can build on.

Ingredients

  • 2 cups spring mix or mixed greens
  • ½ ripe avocado, sliced or cubed
  • 1 tablespoon hemp seeds
  • ¼ cup chopped red bell pepper
  • 1 tablespoon olive oil
  • 1–2 teaspoons vinegar (balsamic, ume plum, or apple cider)
  • Pinch sea salt
  • Freshly ground black pepper

Directions

  1. 1.Place the greens in a bowl.
  2. 2.Add the avocado, hemp seeds, and red bell pepper.
  3. 3.Drizzle with olive oil and vinegar.
  4. 4.Season with salt and pepper.
  5. 5.Toss gently to combine.

Notes

This is a simple base salad. Add anything with color or crunch to make it your own — thinly sliced carrot, shredded purple cabbage, seeds, fresh herbs, or sprouts all work well.
