Simple Greens with Avocado & Hemp Seeds

Fresh greens with creamy avocado, hemp seeds, and a light vinaigrette. Red bell pepper adds a touch of sweetness and color, making this a simple, everyday salad you can build on.
Ingredients
- —2 cups spring mix or mixed greens
- —½ ripe avocado, sliced or cubed
- —1 tablespoon hemp seeds
- —¼ cup chopped red bell pepper
- —1 tablespoon olive oil
- —1–2 teaspoons vinegar (balsamic, ume plum, or apple cider)
- —Pinch sea salt
- —Freshly ground black pepper
Directions
- 1.Place the greens in a bowl.
- 2.Add the avocado, hemp seeds, and red bell pepper.
- 3.Drizzle with olive oil and vinegar.
- 4.Season with salt and pepper.
- 5.Toss gently to combine.
Notes
This is a simple base salad. Add anything with color or crunch to make it your own — thinly sliced carrot, shredded purple cabbage, seeds, fresh herbs, or sprouts all work well.
