Simple Steamed Zucchini

A quick, tender way to cook zucchini with just a few ingredients. Light, simple, and easy to pair with almost anything.
Ingredients
- —2–3 zucchini or yellow squash
- —About 1 inch water
- —Olive oil or butter
- —Salt
- —Freshly ground black pepper
Directions
- 1.Add about 1 inch of water to a pan and bring to a boil.
- 2.Chop the zucchini into large pieces (about ½ inch or slightly larger).
- 3.Add the zucchini to the pan, cover, and reduce heat to low once boiling.
- 4.Simmer for about 7 minutes, until tender.
- 5.Pour off most of the cooking water.
- 6.Add a little olive oil or butter, salt, and black pepper. Toss gently.
Notes
This is a soft, simple preparation — cook less if you prefer more bite.
Good alongside roasted meats or simple plates.
