Smoked Paprika Roasted Turnips

Turnips roasted with olive oil, smoked paprika, cumin, and oregano until soft and lightly browned. A simple, flavorful side that pairs especially well with lamb.
Ingredients
- —6–8 small turnips (or 2–3 larger turnips)
- —1–2 tablespoons olive oil
- —½ teaspoon sea salt
- —¼ teaspoon freshly ground black pepper
- —½ teaspoon smoked paprika
- —½ teaspoon cumin
- —¼ teaspoon dried oregano
Directions
- 1.Preheat the oven to 400°F.
- 2.Wash the turnips and trim the tops and bottoms.
- 3.Cut the turnips into quarters, then slice them thinly.
- 4.Spread the turnips on a baking sheet lined with parchment paper if you like.
- 5.Drizzle with enough olive oil to coat, then season with salt, pepper, smoked paprika, cumin, and oregano. Toss well.
- 6.Roast for about 20 minutes, stirring once if you like, until soft and lightly browned.
Notes
I like to use smaller turnips — they tend to be more tender.
Turnips release some liquid as they cook, so spreading them out on the pan helps them roast instead of steam.
Also good as a base for taco fillings.
