Serves 2–3Prep 10 minutesCook About 20 minutesVeganGFPaleo
Turnips roasted with olive oil, smoked paprika, cumin, and oregano until soft and lightly browned. A simple, flavorful side that pairs especially well with lamb.
Ingredients
- —6–8 small turnips (or 2–3 larger turnips)
- —1–2 tablespoons olive oil
- —½ teaspoon sea salt
- —¼ teaspoon freshly ground black pepper
- —1 teaspoon smoked paprika
- —1 teaspoon cumin
- —½ teaspoon dried oregano
Directions
- 1.Preheat the oven to 400°F.
- 2.Wash the turnips and trim the tops and bottoms.
- 3.Cut the turnips into quarters, then slice them thinly.
- 4.Spread the turnips on a baking sheet lined with parchment paper if you like.
- 5.Drizzle with enough olive oil to coat, then season with salt, pepper, smoked paprika, cumin, and oregano. Toss well.
- 6.Spread them out so they roast rather than steam.
- 7.Roast for about 20 minutes, stirring once if you like, until soft and lightly browned.
Notes
Turnips release some liquid as they cook, so spreading them out on the pan helps them roast instead of steam.
Also good as a base for taco fillings.
