Simple Baked Burgers & Mushrooms

This is an easy one-pan meal. The burgers cook on a rack so they brown nicely while mushrooms roast underneath and soak up some of the flavor.
Ingredients
- —1 lb ground beef
- —½ small red onion, finely chopped
- —A few handfuls button or cremini mushrooms (whatever fits around the burgers on the pan)
- —1–2 tablespoons olive oil
- —2 teaspoons Chinese five spice powder
- —1 teaspoon salt
- —½ teaspoon freshly ground black pepper
Directions
- 1.Preheat the oven to 400°F.
- 2.Divide the ground beef into four patties (about ¼ lb each).
- 3.Season both sides of the burgers with salt, pepper, and any optional spices.
- 4.Place the burgers on a wire rack set over a baking sheet.
- 5.Scatter the mushrooms around or under the rack on the baking sheet.
- 6.Drizzle the mushrooms with olive oil and season lightly with salt and pepper.
- 7.Bake for about 20 minutes, until the mushrooms are tender and the burgers are cooked to medium-rare.
Notes
Using a rack allows the burgers to brown while the mushrooms cook underneath.
Cooking time may vary slightly depending on burger thickness and your oven.
Medium-rare is ideal here — cook a few minutes longer if you prefer them more well-done.
Serving Suggestion
- Serve with a fermented pickle and a little mustard for brightness and balance.
