Simple Baked Burgers & Mushrooms

This is an easy one-pan meal. The burgers cook on a rack so they brown nicely while mushrooms roast underneath and soak up some of the flavor.

Ingredients

  • 1 lb ground beef
  • ½ small red onion, finely chopped
  • A few handfuls button or cremini mushrooms (whatever fits around the burgers on the pan)
  • 1–2 tablespoons olive oil
  • 2 teaspoons Chinese five spice powder
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper

Directions

  1. 1.Preheat the oven to 400°F.
  2. 2.Divide the ground beef into four patties (about ¼ lb each).
  3. 3.Season both sides of the burgers with salt, pepper, and any optional spices.
  4. 4.Place the burgers on a wire rack set over a baking sheet.
  5. 5.Scatter the mushrooms around or under the rack on the baking sheet.
  6. 6.Drizzle the mushrooms with olive oil and season lightly with salt and pepper.
  7. 7.Bake for about 20 minutes, until the mushrooms are tender and the burgers are cooked to medium-rare.

Notes

Using a rack allows the burgers to brown while the mushrooms cook underneath.

Cooking time may vary slightly depending on burger thickness and your oven.

Medium-rare is ideal here — cook a few minutes longer if you prefer them more well-done.

Serving Suggestion

  1. Serve with a fermented pickle and a little mustard for brightness and balance.
