Tender Chili & Cumin Beef Roast

A tender beef roast cooked in a warm chili and cumin broth. Good on its own or as the center of a meal.

Ingredients

  • 1–2 lb beef roast
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • Salt and black pepper
  • 2½ cups water

Directions

  1. 1.Heat the olive oil using the sauté function on an Instant Pot.
  2. 2.Season the beef lightly with salt and place in the pot. Brown on all sides.
  3. 3.Add the chili powder, cumin, garlic powder, oregano, salt, and pepper. Turn the meat to coat and let the spices warm briefly.
  4. 4.Pour in the water, scraping the bottom of the pot to release any browned bits.
  5. 5.Seal and cook on high pressure for 2 hours.
  6. 6.Let the pressure release naturally.
  7. 7.Serve the beef in pieces with the broth.

Notes

The beef should be very tender and easy to pull apart.

This makes a rich, flavorful broth along with the meat.

Use enough water to create broth, but do not cover the meat.

Adjust the spices slightly if using a larger roast.

Good with the mashed potatoes and a spoonful of yogurt or sour cream.
