Tender Chili & Cumin Beef Roast

A tender beef roast cooked in a warm chili and cumin broth. Good on its own or as the center of a meal.
Ingredients
- —1–2 lb beef roast
- —1 tablespoon olive oil
- —1 teaspoon chili powder
- —1 teaspoon cumin
- —½ teaspoon garlic powder
- —½ teaspoon dried oregano
- —Salt and black pepper
- —2½ cups water
Directions
- 1.Heat the olive oil using the sauté function on an Instant Pot.
- 2.Season the beef lightly with salt and place in the pot. Brown on all sides.
- 3.Add the chili powder, cumin, garlic powder, oregano, salt, and pepper. Turn the meat to coat and let the spices warm briefly.
- 4.Pour in the water, scraping the bottom of the pot to release any browned bits.
- 5.Seal and cook on high pressure for 2 hours.
- 6.Let the pressure release naturally.
- 7.Serve the beef in pieces with the broth.
Notes
The beef should be very tender and easy to pull apart.
This makes a rich, flavorful broth along with the meat.
Use enough water to create broth, but do not cover the meat.
Adjust the spices slightly if using a larger roast.
Good with the mashed potatoes and a spoonful of yogurt or sour cream.
